Momo sauce

INGREDIENTS:

  1. 2 tbsp - vegetable oil
  2. 1/2 cup  - diced onion
  3. 1 tsp  - minced garlic
  4. 1/2 tsp - chili powder
  5. 1/4 tsp - hot-red-chili-flakes
  6. 1/8 tsp - turmeric
  7. 1 - large tomato, diced
  8. 1/3 cup - water
  9. 1 tbsp - soy sauce
  10. 2 tbsp - red-wine vinegar
  11. 1/4 tsp - pepper

INSTRUCTIONS:

Heat a small saucepan over medium. Add oil, then onion, garlic, chili powder, chili flakes and turmeric. Cook until onion starts to soften, 3 min. Add tomato, water and soy. Bring to a boil, then reduce heat to medium-low. simmer, uncovered, until tomato is soft and sauce is thickened, about 15 min. stir in vinegar and pepper. Purée mixture in a blender or with a hand blender. Serve with Nepalese momo dumplings.
